 The article deals with the analysis of the existing methods of investigating the antioxidant activity of plants’ origin and the expediency of measuring oxidation-reduction potential for this purpose.The integral AOA of alcohol extracts Urtica dioica, Trifolium pretense, Chelidonium majus, Hippophae rhamnoides has been determined by potentiometric method using the mediator system. It was established that the leaves of sea – buckthorn are characterised by the highest antioxidant activity (2.05 ± 0.1 mg AA / ml). The АОА of plants Urtica dioica, Chelidonium majus, that were growing along the transport zone is higher by 23,1-27,9% comparing with the plants collected from environmentally friendly area. It was found out that the plants of Hippophae rhamnoides L. coriander were adapted to oil pollution, as evidenced by the absence of a significant difference between AOA of plants collected from environmentally friendly area comparing with the plants that were growing on the soil polluted with petroleum products.

Sea buckthorn (Hippophae rhamnoides) berries are well known for their content in bioactive compounds, high acidity, bright yellow color, pleasant taste and odor, thus their addition in a basic food such as bread could be an opportunity for modern food producers. The aim of the present research was to investigate the characteristics and the effects of the berry’ flour added in wheat bread (in concentration of 1%, 3% and 5%) on sensory, physicochemical and antioxidant properties, and also bread shelf life. Berry flour contained total polyphenols—1467 mg gallic acid equivalents (GAE)/100 g, of which flavonoids—555 mg GAE/100 g, cinnamic acids—425 mg caffeic acid equivalents (CAE)/100 g, flavonols—668 mg quercetin equivalents (QE)/100 g. The main identified phenolics were catechin, hyperoside, chlorogenic acid, cis- and trans-resveratrol, ferulic and protocatechuic acids, procyanidins B1 and B2, epicatechin, gallic acid, quercetin, p- and m-hydroxybenzoic acids. The antioxidant activity was 7.64 mmol TE/100 g, and carotenoids content 34.93 ± 1.3 mg/100 g. The addition of berry flour increased the antioxidant activity of bread and the shelf life up to 120 h by inhibiting the development of rope spoilage. The obtained results recommend the addition of 1% Hippophae rhamnoides berry flour in wheat bread, in order to obtain a product enriched in health-promoting biomolecules, with better sensorial and antioxidant properties and longer shelf life.

Lipid oxidation in foods can be retarded by the addition of antioxidants. Certain plants rich in compounds with antioxidant activity manifest an increasing interest in food industry because they retard oxidative degradation of lipids. Sea buckthorn (Hippophae rhamnoides), alcoholic extract was investigated for antioxidant activity. Sea buckthorn fruits were extracted with ethanol using a Soxhlet extractor and the crude extract was analyzed in order to establish total soluble phenolics and the antioxidant activity. The alcoholic extract of Sea buckthorn was found to contain phenols with antioxidant activity. The extract was studied for 1,1-diphenyl-2-picrylhydrazyl radical (DPPH), superoxide anion and hydroxyl radical scavenging activity. The extract was also studied for lipid peroxidation assay by thiobarbituric acid-reactive substances (TBARS) method. The results indicated that Sea buckthorn annihilates free DPPH radicals, the superoxide anion and the hydroxyl radical and it has an inhibitory effect upon lipid peroxidation process.

Background: Reactive oxygen species are involved in the etiology and progress of many kinds of diseases such as cancer, cardiovascular diseases, inflammatory and neurodegenerative disorders. Epidemiological studies reported that fruits, vegetables, and wines containing a high percentage of phenolics and flavonoids showed a positive impact in treating inflammatory diseases, reducing cancer risk, and increasing life expectancy. Objective: Some Mongolian medicinal plants were studied for their antioxidant activity, and anti-cancer effects. Methods: Some Mongolian medicinal plant extracts were examined for their antioxidant activity by the DPPH-radical scavenging assay, the content of phenolics, and flavonoids by Folin-Ciocalteu and the Dowd method respectively, and anti-cancer activities in human hepatoma cell line HepG2 cells by MTT assay. Results: Methanol extract from Hippophae rhamnoides L. leaf and ethanol extract from Artemisia macrocephala Jacq. ex Bess. showed the highest efficiency to scavenge free radicals. Ethanol extracts from Hippophae rhamnoides L. grain and Paeonio anomala L. leaf showed the highest total phenolics content whereas Hippophae rhamnoides L. fruit methanol extract and ethanol extract from Caragana leucophloea pojark. mentioned the highest flavonoids content. The Artemisia macrocephala Jacq. ex Bess seed wallet and Paeonia anomala L. seed wallet showed the most potent antiproliferative effects against human liver cancer HepG2 cell line. Gnetin-H compound was isolated from the Paeonio anomala L. seed wallet extract and its molecular structure was determined by 1 H and 13C NMR spectrum and IR spectroscopy methods. Conclusion: The screening study on anti-oxidative effects of 21 extracts from 15 Mongolian medicinal plants showed antioxidative activities and was rich in phenolics and flavonoids. Among these, methanol extract of the Hippophae rhamnoides L. leaf showed a better anti-oxidative effect than the ethanol extract. Artemisia macrocephala Jacq. ex Bess and Paeonia anomala L. seed wallet mentioned the best anti-cancer effects. Gnetin-H, methyl gallate, ethylgallate were the major components in the extract from the Paeonio anomala L. seed wallet. Finally, the molecular structure of gnetin-H was determined by NMR and IR spectroscopy. Further investigation, especially in vivo antioxidant activity is needed to justify the use of a natural source of antioxidants to prevent the progression of diseases such as cancer.
