AbstractThe Education Council of the Catalonian government drew up a programme to improve the quality control of school canteens in Catalonia. The objectives of this programme were to contribute to developing healthier eating habits in school children through school canteens and to improve school canteen services considering other aspects such as service, operation, management, end-users, frontline staff and supervisors of menu planning.This paper deals with two programme components aiming at introducing Nutrition in the school syllabus and school menu assessment. Various departments, organisations and associations were involved in programme development and implementation.Initial analysis was based on information collected from formal administrative reports completed by a survey on 100 primary schools. From this preliminary analysis it was concluded that problem identification needs to be completed by an understanding of underlying reasons in order to design adequate solutions and guarantee implementation.

We investigated breakfast eating habits and lifestyle behaviors among Saudi school children attending public versus private schools. A random sample of 1149 children (girls: 54.4%) from public and private schools was selected from elementary schools using the multistage stratified cluster method. Measurements included body weight, height, body mass index (BMI), and self-reported questionnaires filled by the child’s parents. There was no significant (p = 0.44) difference in the prevalence of breakfast intake between children attending public (20.6%) versus private (19.4%) schools. However, there was a gender by school type interactions in breakfast intake frequency, as boys in private but not in public schools had significantly (p = 0.006) higher (26.3%) daily breakfast intake than girls (13.3%). Over 56% of the children ate and drank from the school canteen, and impacting factors on children’s choices were children’s desire, food taste, and parental influence. More parents of children in private (12.1%) than in public (6.9%) schools were satisfied with the food in the school canteen. Younger age (aOR = 0.889, 95% CI = 0.815–0.970, p = 0.008), higher father education (aOR = 1.380, 95% CI = 1.130–1.686, p = 0.002), family income (aOR = 1.227, 95% CI = 1.005–1.498, p = 0.044), and insufficient sleep duration (aOR = 0.740, 95% CI = 0.553–0.990, p = 0.042) were significantly associated with being in a private school. Furthermore, no significant differences, when adjusted for socio-demographic factors, appeared in breakfast intake or overweight/obesity relative to school type. Interventions to improve daily breakfast consumption and lifestyle behaviors of Saudi children are warranted.

Purpose – The Australian Dietary Guidelines support good health and disease prevention. Children with healthy eating habits established early in life have been shown to continue these habits into adulthood compared with those children who have poor eating habits in their younger years. The nutritional intake of many Australian children is not in accordance with the national guidelines. The reasons children make the food choices they do are unclear from the literature. The paper aims to discuss these issues. Design/methodology/approach – This study used participatory action research methods to explore why primary school-aged children make the food choices that they do. A non-government primary school requested assistance in encouraging their children to make healthier choices from the school canteen menu. The authors gathered opinions from the children in two different ways; a group discussion during class and a “discovery day” that involved four class grades. The authors identified children’s food preferences and food availability in canteens. The authors explored how the children perceived healthy foods, the importance of a healthy food environment and what criteria children use to decide what foods to buy. Findings – Children’s food preferences were mostly for unhealthy foods, and these were readily available in the canteen. The perception about what foods were healthy was limited. Despite being asked to develop a “healthy” menu, the majority of choices made by the children were not healthy. Children described unhealthy choices as preferable because of taste of the food, if it was sugary, if it was quick to eat, available and cheap, the relationship of food and weather, the connection to health conditions and peer dominance. Practical implications – This study suggests that children make their food choices based on simple concepts. The challenge lies around producing healthy options in collaboration with the school community that match the children’s food choice criteria. Originality/value – This paper provides a modern and inspiring whole school approach based on equity and empowerment of the children. Discovering why children make food choices from the children’s perspective will help to present healthy options that will be more appealing for children. The methodology used to uncover why children make their food choices has also provided valuable insight into a study design that could be used to address other childhood research questions. The methodology offers an educative experience while gathering rich information directly from the children. This information can be used by the school to support children to have more control over their health and to develop behaviours to increase their health for the rest of their lives.

Background: Indonesian school children spend one-third of their time in school, where they are exposed to a variety of foods at school canteens. However, the healthiness of school canteens is not yet well understood. This study was conducted to (1) characterize the healthiness and quality of management of school canteens, and (2) measure readiness of school canteens to reopen following COVID-19 closures.Design and Methods: Mixed-methods were used to conduct a cross-sectional study. Data were collected from schools located in the Bantul District of Indonesia. Primary schools (n=152) were randomly selected, with a final sample size of 147. Data were collected using Google Forms, delivered via WhatsApp or email. School canteens were classified as healthy if they had a Healthy Canteen Score (HCS) >= 10, or unhealthy if they had a HCS < 10.Results: Less than half (43.5%) of school canteens were deemed to be healthy. School canteens were more likely to be healthy if the canteen manager had a formal decision letter (OR=15.2; 95% CI=3.7-62.5); used print material messaging (OR= 3.2 to 4.6 times); or received inspection by external officers periodically (OR=2.8; 95% CI= 1.04-7.5). Readiness to reopen was 4.5 (OR=4.5; 95%CI: 1.1-17.9) times higher among schools that had their own canteen, and 4 (OR=3.9; 95% CI =1.1-13.8) times higher among schools located in rural areas, adjusting for the remaining variables.Conclusions: School canteen healthiness can be improved by implementing national food policy and healthy school canteen standards accompanied by the existence of good management practices within schools, particularly following the COVID-19 pandemic.

AbstractObjectiveOverweight and obesity in childhood are serious public health issues, both in developing and developed countries. The present study aimed to ascertain overweight and obesity prevalence rates among Togolese schoolchildren in Lomé, Togo, and their correlation with physical activity, socio-economic conditions and eating habits.DesignCross-sectional survey conducted in December 2015. Overweight and obesity were defined using age- and sex-specific BMI cut-off points of the International Obesity Task Force. Physical activity, socio-economic conditions and eating habits were assessed with a standardized questionnaire. Specially trained medical students interviewed children and collected the data. After bivariate regression analyses, factors associated with overweight/obesity were identified by multivariate logistic regression. Statistical significance was two-sided P<0·05.SettingLomé, Togo.SubjectsRepresentative sample of 634 children (288 boys, 346 girls), aged 8–17 years, who were studying in primary schools.ResultsOverweight and obesity respectively affected 5·2 and 1·9 % of children surveyed. Watching television (>4 h) on weekends (OR; 95 % CI: 3·8; 1·2, 12·0, P=0·02) and medium dietary diversity score (3·0; 1·1, 8·1, P=0·03) were independently associated with overweight/obesity in a multivariate regression model. Eating breakfast in the school cafeteria (0·2; 0·1, 0·8, P=0·03) and eating fruits (0·4; 0·1, 0·9, P=0·03) significantly reduced the risk of overweight/obesity.ConclusionsOverweight and obesity prevalence were linked with sedentary behaviour and non-optimal food diversity. Promoting physical activity and fruit consumption should be explored as interventions to reduce and prevent overweight and obesity in Lomé schoolchildren. In addition, preventive approaches in the social environment of children should be considered.

Abstract Background Childhood obesity has become a public health problem. Worldwide, the prevalence of overweight and obesity in children has increased dramatically especially in developing countries. The present study aimed to assess whether six months intervention program with parents' implication in primary schools is able to decrease morning snack consumption among children aged 6 to 12 years. Methods We carried out a quasi experimental study with two groups of schoolchildren in the region of Sousse (Tunisia) from 2015 to 2016. One primary school in each group was selected. In each school, we randomly selected a sample size of schoolchildren and their parents. The intervention was based on healthy eating habits promotion. Results The consumption of morning snacks the day before data collection, reported by children, decreased significantly in post-intervention in both intervention and control groups. The decrease of consumption of morning snacks was significantly higher in intervention group (p = 0.009). According to parents, the proportion of children who had the habit of eating morning snack decreased significantly from pre to post-intervention in intervention group (p &lt; 0.001). Conclusions A healthy environment should be created through effective school policies to prevent obesity. Key messages The consumption of morning snacks reported by children, decreased significantly in post-intervention. A healthy environment should be created through effective school policies to prevent obesity.

Background and Objectives: Eating habits acquired or changed during childhood are likely to track into adulthood. Due to the fact that nutritional behaviours are not so strongly formed among children, it is easier to change and develop them in children than in adults. The aim of this study was to assess the impact of selected sociodemographic factors affecting fruit and vegetable consumption (i.e., age, parents’ body mass index, parents’ level education, duration of breastfeeding, child’s time spent in front of computer/television) among children in school canteens. Materials and Methods: The sample consisted of 106 participants (52 girls, 54 boys) aged 6–12. The frequency of consuming fruits and vegetables at a school canteen was assessed using bar code cards for two weeks. Body composition estimates were obtained using a foot-to-foot bioelectrical impedance analysis, body height was measured using a stadiometer Seca 213. The questionnaire contained questions about selected factors which can have an influence on fruit and vegetable consumption. In the study group, 13.2% of participants were overweight and 17.9% were obese. Results: Our results showed a statistically significant relationship between age and fruit and vegetable consumption, and it increased with age in both sexes. Conclusions: Bearing in mind the various conditions discussed when shaping the eating habits of pre-school- and early-school-aged children, the importance of proper nutritional education should be stressed both among children and parents.

Community catering or to use another common term especially in the American literature institutional foodservice plays a central role in changing our food system towards sustainability. Community catering establishments can bring about changes in this context at various levels. Hence, in the context of menu planning, they have a direct influence on the level of meat consumption. Indirectly, however, they can also support changes in eating habits by offering the guest an equally attractive alternative, thus giving him or her a sense of how tasty a low-meat cuisine can be. On the basis of this experience, the consumer may possibly change in turn his or her own purchasing behavior and menu planning at home. With the increasing importance of catering for day-care centers and schools, community catering also has a considerable influence on the nutritional status as well as on the development of people’s individual diet and the later eating habits of young people. By understanding socio-technical systems as embedded in ecological systems this paper takes a systemic view on innovations in transformation domains as the objects of desire for governance towards sustainability. The framework developed in the context of the BMBF-funded research project “Governance model for socio-ecological transformation processes in practice: development and testing in three areas of application” known by its acronym TRAFO 3.0 was applied to examine innovative approaches and actors in community catering and their contributions to more sustainable food systems. A number of studies show that a very large environmental relief potential can be achieved by reducing the quantity of meat and other animal products offered. However, the concrete implementation of this goal is associated with a multitude of challenges, since meat-containing meals are an important part of German food culture. How the transformation towards meals with fewer animal products in German community catering can succeed is an important question in the context of the transformation to sustainable food systems. To answer this question, we analyzed the status quo of the socio-technical system of German community catering using a developed governance model. One of the central results was that community catering stakeholders who have successfully reduced their offer of animal products died fundamental changes in meal planning. Cooks had to “reinvent” meals completely to be successful.

Abstract Objectives This study aims to show that if provided healthy food options in the on-campus canteen, medical students will develop healthier eating habits. Methods A mixed methods approach was utilized to conduct primary market research which look at the purchasing behavior of medical students, and faculty. The inventory offered in the school canteen, was tracked from 2016 through the first fifteen weeks of 2019. The data from the vendor listed the food items into 9 categories: bottled beverages, candy, general merchandise, ice cream, juice, large snacks, milk, non-carb beverage, and pastry. Of these categories, the top 10 sales for each year were obtained. This study included customer survey data, suggestion box data and product inventory data from the vendor. The customer input was summarized and shared with the vendor in the spring of 2018. The vendor accommodated the medical school customers in all the food and beverage options available for purchase beginning in the next stocking cycle. These changes were implemented over the following three months, despite early food service institutional barriers. Results Utilizing the vendor's product inventory excel spread sheets records of sales, product loss, and cost over a three-year period basic statistical analysis indicated that despite an initial drop in sales healthier foods began to trend in the highest sales categories. The foods and beverages that were suggested by students were shown to have been bought more abundantly and frequently after the changes to the canteen were made. Of the nine categories that were analyzed, the beverages showed the most dramatic changes from unhealthy to healthy choices; the sales of healthy beverages increased by 17% over the study period. Interestingly, there was an overall increase in the canteen's total profit in the last year of this study compared to the two previous years. Conclusions Students as active participants, when provided healthier food and beverage options demonstrated purchasing behavior indicating a desire to consume the healthier foods. This will be invaluable in the practice of medicine, as it is more efficacious to educate and motivate patients who need instruction regarding their nutritional needs if the providers are already living by that example.
