1. Energy, protein, zinc, copper, manganese, selenium and dietary fibre intakes of 100 pre-menopausal women (mean age 30·0 ± 6·1 years) from a university community, and consuming self-selected diets, were calculated using 3 d dietary records and food composition values. Subjects also collected a 24 h food composite during the 3 d record period for analysis of Zn, Cu and Mn by atomic absorption spectrophotometry. Daily analysed intakes were compared with those calculated from the corresponding record day.2. Mean daily calculated intakes of energy, protein, Zn, Cu, Mn, Se and dietary fibre were 7·54 ± 1·61 MJ, 74 ± 18 g protein, 10·1 ± 3·3 mg Zn. l·9 ± 0·6 mg Cu, 3·1 ± 1·5 mg Mn, 131 ± 53 μg Se, 19·4 ± 6·6 g dietary fibre.3. Major food sources for each of the trace elements were (%): Zn meat + substitutes 43, dairy products 23·7; Cu breads and cereals 22, vegetables 21; Mn breads and cereals 47, fruits 12; Se meat + substitutes 38, breads and cereals 30.4. Highly significant correlations (P = 0·001) were noted for analysed intakes of Zn, Cu and Mn and those calculated from the corresponding record day. Mean calculated intakes were higher (%): Zn 138, Cu 142, Mn 121, than corresponding mean analysed intakes (P = 0·01). However, the mean nutrient densities (mg/MJ) were comparable: Zn analysed 1·2, calculated 1·4; Cu analysed 0·2, calculated 0·2; Mn analysed 0·4, calculated 0·4.5. All subjects met the Canadian Dietary Standard (CDS) recommended level for Cu but 48% received less than the CDS for Zn, 6% obtaining less than two-thirds of this recommended level. Daily Mn and Se intakes were similar to recent values for North American diets.

Due to a lack of a food composition database on starch and sugars, we developed a comprehensive database on starch and seven types of sugars in commonly consumed foods (n = 2222) in Japan. Dietary record data of 368 toddlers (aged 18–35 months), 376 preschool children (aged 3–6 years), 915 schoolchildren (aged 8–14 years) and 392 adults (aged 20–69 years) were used. The mean starch intake ranged from 55.6 g/day (female toddlers) to 206.0 g/day (male schoolchildren). Irrespective of age and sex, >50% of starch was provided by rice and grains. The mean total sugar intake ranged from 46.1 g/day (female toddlers) to 68.7 g/day (male schoolchildren). In all age and sex groups, the major contributors of total sugar included sucrose (mean: 18.2–34.0 g/day), glucose (7.8–13.1 g/day), lactose (5.3–13.1 g/day) and fructose (7.6–11.1 g/day). The top food sources were dairy products (toddlers) and confectionaries (other age groups) for total sugar, confectionaries for sucrose, fruits (toddlers) and vegetables (other age groups) for glucose, dairy products for lactose and fruits (toddlers and preschool children) and vegetables (schoolchildren and adults) for fructose. In conclusion, this study clarified the starch and sugar intake in Japan and provides a foundation for future research.

The aim of the present study was to analyse the different food and nutrient intakes of the adult Irish population from the lowest and highest quartiles of intake for total fat (%energy) dietary fibre (g/MJ) and fruit and vegetables (g/day). Data on Irish adults (n = 715) from the Irish National Nutrition Survey conducted in 1989 were used for the analyses and showed that the average diet is low in dietary fibre, with fruit and vegetables being only half the recommended level of 400 g. Comparisons of people with low or high intakes (from lowest and highest quartiles) of total fat (%energy), dietary fibre (g/MJ) and fruit and vegetables (g/day) show patterns of food intake differing in both the percentage of consumers and in the mean intakes among consumers only. This analysis provides data which may be useful as a first step towards the development of food-based dietary guidelines for Ireland. In particular, the low intake of fruit and vegetables in the adult Irish population deserves special attention.

AbstractResearch into the analysis, physical properties and health effects of dietary fibre has continued steadily over the last 40–50 years. From the knowledge gained, countries have developed guidelines for their populations on the optimal amount of fibre to be consumed each day. Food composition tables from many countries now contain values for the dietary fibre content of foods, and, from these, combined with dietary surveys, population intakes have been determined. The present review assessed the uniformity of the analytical methods used, health claims permitted, recommendations and intakes, particularly from national surveys across Europe and around the world. It also assessed current knowledge on health effects of dietary fibre and related the impact of different fibre types on health. The overall intent was to be able to provide more detailed guidance on the types of fibre which should be consumed for good health, rather than simply a total intake figure, the current situation. Analysis of data indicated a fair degree of uniformity in the definition of dietary fibre, the method used for analysis, the recommended amount to be consumed and a growing literature on effects on digestive health and disease risk. However, national dietary survey data showed that intakes do not reach recommendations and very few countries provide guidance on the types of fibre that are preferable to achieve recommended intakes. Research gaps were identified and ideas suggested to provide information for more detailed advice to the public about specific food sources that should be consumed to achieve health benefits.

The aim of the present study was to calculate the distribution of total iodine intake among Flemish preschoolers and to identify the major sources contributing to iodine intake. A simulation model using a combination of deterministic and probabilistic techniques was utilised. Scenario analyses were performed to assess iodine intake via dairy products, industrially added iodised salt in bread and discretionarily added iodised household salt. Relevant data from 3-d estimated dietary records of 696 preschoolers 2·5–6·5 years old were used. Usual iodine intakes were calculated using the Iowa State University method. With a more generalised utilisation of iodised salt in bread (44 % of the bakers in 2011 instead of 12 % in 2002), mean iodine intake increased from 159 to 164 μg/d using the McCance and Widdowson's food composition table and from 104 to 109 μg/d using the German food composition table. The percentage of preschoolers with an iodine intake below the estimated average requirement (65 μg/d) decreased from 5–12 to 4–9 %, while the percentage of preschoolers with an iodine intake above the tolerable upper intake level (300 μg/d) remained constant (0·3–4 %). Mean iodine intake via food supplements was 4·2 μg/d (total population) and 16·9 μg/d (consumers only). Both in 2002 and 2011, sugared dairy products, milk and iodised salt (21·4, 13·1, and 8·7 %, respectively in 2011) were the main contributors to total iodine intake. In conclusion, dietary iodine intake could still be improved in Flemish preschoolers. The use of adequately iodised household salt and the more generalised use of iodised salt by bakers should be further encouraged.

1. Randomized cross-over studies were undertaken to determine the effects of daily dietary supplements of pectin (12 g/d), cellulose (15 g/d) and lignin (12 g/d) on stool characteristics of healthy volunteers.2. Detailed dietary records were kept throughout the study. Stool collections over 48 h were used to determine mean stool pH and weight. The single stool transit time was measured using radio-opaque markers.3. Pectin did not significantly alter the mean stool pH, transit time or 24 h wet weight.4. Cellulose lowered the mean stool pH from 6·38 to 6·12, decreased mean stool transit time by 27% and increased mean wet stool weight by 57%.5. Lignin lowered the mean pH from 6·34 to 6·25, decreased the stool transit time by 20% and increased stool weight by 27% but these changes were not statisticallysignificant.6. These findings have shown that individual fibre components have different colonic metabolic effects and support the view that associations between dietary fibre intakes anddiseases such as colorectal cancer should be evaluated with regard to the type of fibrecomponents consumed.

Diet in the first years of life is an important factor in growth and development. Dietary protein is a critical macronutrient that provides both essential and nonessential amino acids required for sustaining all body functions and procedures, providing the structural basis to maintain life and healthy development and growth in children. In this study, our aim was to describe the total protein intake, type and food sources of protein, the adequacy to the Population Reference Intake (PRI) for protein by the European Food Safety Authority (EFSA), and the Recommended Dietary Allowance (RDA) by the Institute of Medicine (IoM). Furthermore, we analyzed whether the consumption of dairy products (including regular milk, dairy products, or adapted milk formulas) is associated with nutrient adequacy and the contribution of protein to diet and whole dietary profile in the two cohorts of the EsNuPI (in English, Nutritional Study in the Spanish Pediatric Population) study; one cohort was representative of the Spanish population from one to < 10 years old (n = 707) (Spanish reference cohort, SRS) who reported consuming all kinds of milk and one was a cohort of the same age who reported consuming adapted milk over the last year (including follow-on formula, growing up milk, toddler’s milk, and enriched and fortified milks) (n = 741) (adapted milk consumers cohort, AMS). The children of both cohorts had a high contribution from protein to total energy intake (16.79% SRS and 15.63% AMS) and a high total protein intake (60.89 g/day SRS and 53.43 g/day AMS). We observed that protein intake in Spanish children aged one to < 10 years old was above the European and international recommendations, as well as the recommended percentages for energy intakes. The main protein sources were milk and dairy products (28% SRS and 29% AMS) and meat and meat products (27% SRS and 26% AMS), followed by cereals (16% SRS and 15% AMS), fish and shellfish (8% in both cohorts), eggs (5% SRS and 6% AMS), and legumes (4% in both cohorts). In our study population, protein intake was mainly from an animal origin (meat and meat products, milk and dairy products, fish and shellfish, and eggs) rather than from a plant origin (cereals and legumes). Future studies should investigate the long-term effect of dietary protein in early childhood on growth and body composition, and whether high protein intake affects health later in life.

This cross-sectional study assessed the risk of zinc deficiency in randomly selected children, aged between 7 and 11 years, living in a poor, peri-urban informal settlement in South Africa. Dietary intake of 149 respondents was evaluated by 24-hour recall and quantitative food frequency questionnaires. Anthropometric and biochemical indices of a subset of 113 were determined. Descriptive statistics, analysis of variance and Pearson correlations were computed using the Statistical Package for Social Sciences, version 14.0. Anthropometric data were analysed using the World Health Organization Anthro plus version 1.0.2 statistical software. Dietary data were analysed with FoodFinder® version 3. The mean age of the children was 9.0±1.1 years. Few zinc-rich sources appeared in the diet that was predominantly plant-based. Mean dietary zinc intake was 4.6±2.2 mg/day. The mean value of serum zinc was 66.4±21.5 µg/dL, with 46% of the children having values less than the 70 µg/dL cut-off. The findings indicate a high risk of zinc deficiency and suboptimal zinc status for the majority of this study population of children, possibly as a result of low consumption of food sources with high bioavailability of zinc, which invariably is a direct consequence of poverty and food insecurity.OpsommingDie doel van hierdie dwarsdeursnitstudie was die bepaling van die risiko van ’n sinktekort in ’n ewekansige steekproef van 7 tot 11 jaar-oue kinders, woonagtig in ’n arm, voorstedelike informele woonbuurt in Suid Afrika. Die gemiddelde sinkinname was 4.6±2.2 mg/dag en die gemiddelde serumsinkwaarde was 66.4±21.5 µg/dL, met 46% van die kinders se waardes onder die 70 µg/dL afsnypunt. Die bevindings dui op ’n hoë risiko vir sinktekort en suboptimale sinkstatus vir die meerderheid van hierdie kinders, moontlik as gevolg van die swak inname van voedselbronne met hoë biobeskikbare sink, wat gewoonlik ’n direkte gevolg van armoede en huishoudelike voedsel insekuriteit is.

The use of untreated urban wastes and domestic sewage contaminated water for the irrigation of agricultural soils is on the rise particularly in the developing countries and is a public health concern with regards to the consumption of vegetables and fruits produced in them which may indirectly accumulate heavy metals in their edible portions. Using the atomic absorption spectrophotometry (AAS), concentrations of Ca, Mg, Na, K (essential bulk elements), Pb, Cd, Cr, Ni, Cu, Zn, Co and Fe (trace elements) were determined in 3 designated areas within the catchment area of River Jakara in Kano Nigeria. Samples were collected from two depths 0-15cm and 15-30cm to cover both dry and wet seasons. The mean concentrations of elements obtained ranged from 0.026 mg/g Cd to 46.83 mg/g Fe and occurred in the magnitude of Fe &gt; Ca &gt; K &gt; Na &gt; Pb &gt;Zn &gt; Co &gt; Cu &gt;Cr &gt; Ni &gt; Cd. The concentrations of the trace elements in the soils in the two depths exceeded the international recommended permissible limits establishing the pollution of the irrigation soils with the trace elements investigated. Based on the findings, it is recommended among others that the relevant organ of government should find an alternative farmland for the farmers within the catchment area of River Jakara where unpolluted waste sources can be utilized for the irrigation of vegetables.

The microbial production of substances that have the ability to inhibit the growth of other microorganisms is possibly the most common defense strategy developed in nature. Microorganisms produce a variable collection of microbial defense systems, which include antibiotics, metabolic by-products, lytic agents, bacteriocins and others. The aim of the present study was to isolate and identify Enterococcus spp. and  its most prevalent species from food samples and determine its antibacterial activity against Staphylococcus aureus isolates. A total of 50 food samples from different sources (dairy products (20 samples) and vegetables and fish (15 samples each)) were collected from different local markets in Baghdad and cultured. Enterococcus spp were isolated from only 32 food samples. E. faecium was the most predominant species which was recovered from 20 samples (62.5 %), 10 dairies, 7 vegetables, and 2 fish. E. faecalis was found in 8 samples (25 %), 5 vegetables and 3 fish.  E. avium was recovered 6.25% as well as E. gallinarium (2 samples for each) Enterococcus avium were all isolated from dairy products but Enterococcus gallinarium one sample isolated from dairies and the other from fish. This study indicates the presence of Enterococcus spp. in the food samples and the ability of these bacteria to produce antibacterial substances which are active against closely related clinical isolates.

AbstractObjectiveA diet rich in phyto-oestrogens has been suggested to protect against a variety of common diseases but UK intake data on phyto-oestrogens or their food sources are sparse. The present study estimates the average intakes of isoflavones, lignans, enterolignans and coumestrol from 7 d food diaries and provides data on total isoflavone, lignan and phyto-oestrogen consumption by food group.DesignDevelopment of a food composition database for twelve phyto-oestrogens and analysis of soya food and phyto-oestrogen consumption in a population-based study.SettingMen and women, aged 40–79 years, from the general population participating in the Norfolk arm of the European Prospective Investigation into Cancer and Nutrition (EPIC-Norfolk) between 1993 and 1997, with nutrient and food data from 7 d food diaries.SubjectsA subset of 20 437 participants.ResultsThe median daily phyto-oestrogen intake for all men was 1199 μg (interquartile range 934–1537 μg; mean 1504 μg,sd1502 μg) and 888 μg for all women (interquartile range 710–1135 μg; mean 1205 μg,sd1701 μg). In soya consumers, median daily intakes were higher: 2861 μg in men (interquartile range 1304–7269 μg; mean 5051 μg,sd5031 μg) and 3142 μg in women (interquartile range 1089–7327 μg; mean 5396 μg,sd6092 μg). In both men and women, bread made the greatest contribution to phyto-oestrogen intake – 40·8 % and 35·6 %, respectively. In soya consumers, vegetable dishes and soya/goat's/sheep's milks were the main contributors – 45·7 % and 21·3 % in men and 38·4 % and 33·7 % in women, respectively.ConclusionsThe ability to estimate phyto-oestrogen intake in Western populations more accurately will aid investigations into their suggested effects on health.
