Genetic principal components for live ultrasound scan traits of Angus cattle

AbstractMultivariate restricted maximum likelihood analyses were carried out for a large data set comprising records for eye-muscle area, fat depth at the 12/13th rib and the rump P8 site, and percentage intramuscular fat, recorded via live ultrasound scanning of Australian Angus cattle. Records on heifers or steers were treated as separate traits from those on bulls. Reduced rank estimates of the genetic covariance matrix were obtained by restricted maximum likelihood, estimating the leading three, four, five, six, seven and all eight principal components and these were contrasted with estimates from pooled bivariate analyses.Results from analyses fitting five or six genetic principal components agreed closely with estimates from bivariate and eight-variate analyses and literature results. Heritabilities and variances for ‘fatness’ traits measured on heifers or steers were higher than those recorded for bulls, and genetic correlations were less than unity for the same trait measured in different sexes. Eye-muscle area showed little association with the other traits.Reduced rank estimation decreased computational requirements of multivariate analyses dramatically, in essence corresponding to those of an m-variate analysis for m principal components considered. Five or six principal components appeared to be necessary to model genetic covariances adequately. The first three of these components then explained about 97% of the genetic variation among the eight traits.A simulation study showed that errors in reduced rank estimates of the genetic covariance matrix were small, once three or more principal components from analyses fitting five or more components were used in constructing the estimates. Similarly, accuracy of genetic evaluation for the eight traits using the first four components was only slightly less than that using all principal components.Results suggest that reduced rank estimation and prediction is applicable for the eight scan traits considered. The leading three to four principal components sufficed to describe the bulk of genetic variation between animals. However, five or more principal components needed to be considered in estimating covariance matrices and the ‘loadings’ of the original traits to the principal components.

Variations in the cross-sectional area of eye muscle of carcasses cut between the tenth and eleventh ribs were investigated, using 105 Hereford and 51 Angus steers aged 20 months. These cattle consisted of three groups, born in successive years. At constant carcass weight, statistically significant differences in eye muscle area were found between breeds and between years. Breed and year differences were also found in eye muscle area with width and depth of eye muscle constant, so that there are limitations to the estimation of eye muscle area from width and depth measurements. A nomograph is given for estimating eye muscle area from width and depth for Hereford and Angus cattle, when all animals are reared in the same year and environment. The use of eye muscle area as an indicator of weight of carcass muscle is discussed.

Considerable information exists on genetic relationships of body composition and carcass quality of young and finished beef cattle. However, there is a dearth of information on genetic relationships of cow body composition over time and, also, relationships with young-animal body-composition measures. The aim of the present study is to understand genetic relationships among various cow body-composition traits of Angus cows over time, from yearling to weaning of a second calf at ~3.5 years. To determine genetic correlations among various composition traits over time, a multi-trait–multi-time analysis is required. For the Maternal Productivity Project, this necessitates modelling of five traits (namely weight and ultrasound measure for loin eye muscle area (EMA), rib fat, P8 rump fat and intramuscular fat) by five time combinations (recordings at yearling then pre-calving and weaning in first and second parity). The approach was based on including all 25 trait-by-time combinations in an analysis using factor analytic models to approximate the genetic covariance matrix. Various models for the residual covariance structure were investigated. The analyses yielded correlations that could be compared with those of past studies reported in the literature and, also, to a set of bivariate analyses. Clustering of the genetic multi-trait–multi-time correlation structure resulted in a separation of traits (weight and EMA, and the fat traits) and also of time effects into early (heifer = before first lactation) and late (cow = post-first lactation) measurements.

This report gives an account of the paternal half-sib analysis of carcass quality, based on commercial joint dissection, on Down cross sheep collected in the four years 1962–65 inclusive. It also includes a discussion of the multiplicative correction factors used, and the phenotypic and genetic correlations between all the traits, estimated from the pooled within-farm, within-year analysis. It shows that there is very little genetic variation for many of the characters but that the percentage leg, percentage best end, age at slaughter and eye-muscle area have much additive genetic variation remaining for worthwhile response to be expected from selection. These three carcass traits are also the most important characters in determining the commercial value and saleability of lamb. From the results obtained it is argued that there is still much genetic variation for fat development in sheep.

Abstract The improvement of carcass traits is an important breeding objective in beef cattle breeding programs. The most common way of selecting for improvement in carcass traits is via indirect selection using ultrasound scanning of selection candidates which are submitted to genetic evaluation programs. Two systems used to analyse ultrasound images to predict carcass traits are the Pie Medical Esaote Aquila (PIE) and Central Ultrasound Processing (CUP). This study compared the ability of the two systems to predict carcass traits for genetic evaluation in Australian Angus cattle. Genetic and phenotypic parameters were estimated using data from 1648 Angus steers which were ultrasound scanned twice with both systems, first at feedlot entry and then following 100 days in the feedlot. The traits interpreted from ultrasound scanning included eye muscle area (EMA), rib fat (RIB) rump fat (RUMP) and intramuscular fat (IMF). Abattoir carcass data were collected on all steers following the full feedlot feeding period of 285 days. For all ultrasound scan traits, CUP resulted in higher phenotypic and genetic variances compared to the PIE. For IMF, CUP had higher heritability at feedlot intake (0.51 for CUP compared to 0.37 for PIE) and after 100 days feeding (0.54 for CUP compared to 0.45 PIE). CUP predicted IMF also tended to have stronger correlations with the breeding objective traits of carcass IMF marbling traits, both genetically (ranging from 0.59 to 0.75 for CUP compared to 0.45 to 0.63 for PIE) and phenotypically (ranging from 0.27 to 0.43 for CUP compared to 0.19 to 0.28 for PIE). Ultrasound scan EMA were the only group of traits in which the heritabilities were higher for PIE (0.52 for PIE compared to 0.40 for CUP at feedlot intake and 0.46 for PIE compared to 0.43 for CUP at 100 days of feeding), however with similar relationships to the breeding objective carcass EMA observed. For subcutaneous fat traits of ultrasound RIB and RUMP, the heritabilites and genetic correlations to the related carcass traits were similar, with the exception being the higher heritability observed for CUP predicted RUMP at feedlot intake at 0.52 compared to 0.38 for PIE. The results from this study indicates that the CUP system, compared to PIE, provides an advantage for genetic evaluation of carcass traits in Angus cattle, particularly for the IMF and associated marbling traits.

Abstract This study was undertaken to evaluate the influence of rumen-protected folic acid (RPFA) on slaughter performance, visceral organ and gastrointestinal tract coefficients, and meat quality in lambs. Sixty-six lambs from 120 Hu ewes were selected based on body weight and maternal diets, and then assigned to six groups using a randomized block experimental design in a 3 × 2 factorial arrangement. The first factor was folic acid (FA) as RPFA in the maternal diet (0 mg/kg [M0F], 16 mg/kg [M16F] or 32 mg/kg [M32F] on dry matter basis). The second factor was FA in the lambs’ diet from weaning until slaughter (0 mg/kg [OC] or 4.0 mg/kg [OF]). The results indicated that the addition of 16 mg/kg FA to the maternal diet increased pre-slaughter weight (PSW), dressing and meat percentage, the reticulum and omasum coefficients, length of the jejunum and ileum, tail fat and perirenal fat coefficient and a* value of the meat color. The addition of RPFA to the lambs’ diet increased PSW, dressing and meat percentage, eye muscle area, abomasum weight, weight and length of the small intestine, but reduced the coefficients of tail fat. A M×O interaction was observed for the weights of heart, lungs, rumen and total stomach, weight and coefficient of omental fat and the GR value. Collectively, RPFA in the maternal and lambs’ diet improved slaughter performance and meat quality by stimulating the morphological development of the gastrointestinal tract and the distribution of fat in the body.

The research was conducted to study the effect of heat stress on carcass characteristics and meat quality in indigenous sheep. Nine sheep were divided into three groups which were almost similar in age, sex and weight. Three groups were divided as zero hour (T0), four hours (T4) and eight hours (T8) heat exposure to direct sunlight. During experimental period temperature–humidity index (THI) value was calculated as 27.09 which indicated T4 and T8 groups were subjected to heat stress condition for at least four hours and eight hours respectively every day. Slaughter weight, body length and heart girth had no significant difference among the treatment groups. Dry matter, ash and ether extract had no significant difference (p>0.05) among the treatment groups but crude protein were increased with the increase of heat stress from T0 to T8 group (p<0.05). Drip loss was increased (p<0.05) in non-exposure group than treated groups but there is no significant result (p>0.05) found in pH and cooking loss. Carcass weight and eye muscle area had no significant difference (p>0.05) among the treatment groups but dressing percentage was decreased with the increase of time in heat treated groups (p<0.01). Significant difference (p<0.05) were found in weight of heart, kidney, lung + trachea and pluck between control and heat treated groups. The significant difference (p>0.05) in empty gut was found in gut with content and gut fill in heat treated groups.
