Effects of restricted feeding and re-feeding of Barbarine lambs: carcass composition and fatty acid composition

Abstract Fifty intact male Barbarine lambs were used to assess the effects of restricted feeding and re-alimentation on carcass composition and fatty acid (FA) composition of intramuscular fat. Five lambs were slaughtered at the start of the trial; the remainder were randomly allocated to three groups. One group was offered only stubble grazing (low: L), another, also on stubble, received, indoors, an average of 80 g dry matter (DM) of soya-bean meal per day (medium: M); the third group was kept indoor and had free access to hay and 450 g of concentrate (high: H). At the end of this restriction period (70 days), five lambs per group were slaughtered. The 10 remaining animals in each group were divided into two groups receiving concentrate and hay ad libitum. The crude protein (CP) content of the concentrate was 160 and 210 g/kg DM in the two treatments, respectively. At the end of the trial all animals were slaughtered at 37·61 ± 2·05 kg live weight.In the restriction period, bone tissue was similar in terms of mass for all diet treatments. The absolute weight of muscle and fat in carcasses was higher for unrestricted sheep (H) than for restricted ones, but L and M lambs had proportionately less fat and more muscle than those given food indoors. Intramuscular fat composition was similar for all the treatments. During this period, the carcass gain of M lambs had the highest proportion of muscle and the lowest fat concentration, which is the better composition. At the end of the compensating period, all carcasses contained the same quantity of bone and muscle, but unrestricted sheep had significantly more fat than compensating ones. So, carcasses of compensating animals contained relatively less fat (240 v. 310 g/kg) and more muscle (550 v. 500 g/kg) than unrestricted ones. The carcass gain of lambs with an earlier nutritional history on L had the highest muscle and the lowest fat concentration. The intramuscular lipid composition in terms of fatty acids showed differences between treatments. Unrestricted animals contained more C14: 0 and C16: 0 and compensating animals more C18: 2 and a higher proportion of polyunsaturated fatty acids (PUFA) and PUFA: saturated FA ratio. There were no significant differences associated with CP level during the re-alimentation period

The empty body weight (EBW) as well as carcass weight were significantly higher in H than in restricted sheep. Digestive tract components and liver weight were the same for all treatments. However, skin weight was significantly (P < 0·01) affected by dietary treatment. The heart and lungs were also heavier in H lambs than in the two other groups. Conversely, the relative weights of gut and liver as proportion of EBW increased in restricted lambs, while that of skin and red organs was not affected by diet.In the re-alimentation period and with both CP levels, the compensating animals showed the same growth rate as the previous unrestricted ones. At the end of this period, organ weights, in both absolute and relative value, were comparable among lambs of the three nutritional histories and two CP level. The absolute and proportional daily gains were similar in all animals for visceral and external organs, but they were significantly higher in H lambs than in L and M ones for the omental and mesenteric fat and testis.

1. The carcass composition, the composition and characteristics of the subcutaneous and longissimus dorsi muscle fats, the volatile fatty acids of the rumen-reticulum fluid and the degree of flavour and odour of the cooked 12th rib chops of two groups each of fifteen Southdown–Romney cross ewe and wether lambs fed respectively white clover and perennial ryegrass have been determined. The lambs had been on treatment for 5 months and were slaughtered when about 9 months of age.2. The white clover-fed lambs had a mean live weight at slaughter of 94 lb ± 9 lb compared with 67 lb ± 7 lb for the perennial ryegrass-fed lambs. The carcasses of the white clover-fed lambs had greater (P < 0·01) amounts of fat.3. The iodine values of the subcutaneous fats of the white clover-fed lambs were highly significantly greater than those of the ryegrass-fed lambs and this result was consistent with the greater deposition of endogenous fat.4. The extra fatness of the white clover-fed lambs was consistent with their greater production of rumen-reticulum volatile fatty acids.5. The maj or differences in fatty acid composition of subcutaneous and intramuscular fats between pasture treatments were the highly significant increases in shorter-chain saturated and C15 branched-chain acids of the ryegrass-fed lambs. In addition, the subcutaneous fat of the ryegrass group contained highly significantly more octadecadienoic and octadecatrienoic acids while the 1. dorsi fat of the ryegrass group was highly significantly richer in stearic and oleic acids.

AbstractThis study investigated the efficiency of growth and the carcass characteristics of 24 Greyface (Border Leicester × Scottish Blackface), 24 Texel (12 purebred and 12 Texel × Texel-Greyface) and 24 Rouge (12 purebred and 12 Rouge × Rouge-Greyface) lambs finished on the same level of feeding. The efficiency of live-weight gain (kg/MJ) was higher in Greyface compared with Texel lambs (P< 0·01). The efficiency of empty body-weight gain (kg/MJ) was higher in Greyface (P< 0·01) and Rouge (P< 0·05) compared with Texel lambs. The efficiency of carcass gains (kg/MJ) tended to be higher in Greyface and Rouge compared with Texel lambs (P= 0·07). The efficiency of non-carcass component gains (kg/MJ) was also higher in Greyface compared with Texel lambs (P0·05). Carcass water, protein, lipid and ash gains did not vary significantly between the genotypes, however carcass energy gain tended to be higher in Greyface and Rouge compared with Texel lambs (P= 0·08). The relative proportions of water, protein, lipid and ash in carcass gains did not vary significantly between the genotypes. At the end of the experiment carcass water content was higher in Texel compared with Greyface lambs (P< 0·05) and carcass ash content was lower in Texel compared with Greyface (P< 0·01) and Rouge (P< 0·05) lambs. The concentration of saturated fatty acids was higher in Greyface compared with Rouge lambs (P< 0·001) and higher in Rouge compared with Texel lambs (P< 0·05). Monounsaturated fatty acid concentrations were higher in Rouge compared with Greyface lambs (P< 0·05) and higher in Texel compared with Rouge lambs (P< 0·001). Polyunsaturated fatty acid concentrations were higher in Rouge and Texel compared with Greyface lambs (P< 0·01). The ratio of n-6:n-3 fatty acids was lower in Rouge compared with Greyface lambs (P< 0·05).The efficiency of empty body gain was higher in male compared with female lambs (P< 0·05). Carcass water (P< 0·01) and protein (P< 0·05) gains were higher in male lambs. At the end of the experiment male carcasses contained a higher content of water (P< 0·05), protein (P< 0·01) and ash (P= 0·07), and a lower lipid (P< 0·05) and energy (P< 0·001) content. Carcass lipids from male lambs contained a higher concentration of polyunsaturated fatty acids (P< 0·001) and tended to contain a lower concentration of saturated fatty acids (P = 0·06).

AbstractTwo randomized-block experiments were carried out to examine the relative value of wheat and barley as supplements to grass silage for finishing beef cattle. In each experiment unwilted, formic acid-treated silage was offered ad libitum and supplemented with 500 g soya-bean meal and 50 g minerals and vitamins to 44 12-month-old bulls for 157 and 172 days in experiments 1 and 2 respectively. Twelve of the animals also received 2·5 kg rolled spring barley (LB), 12 received 4·0 kg barley (HB) and 20 received 3·25 kg rolled wheat (W). For experiments 1 and 2 respectively the barley contained 796 and 787 g dry matter (DM) per kg; 118 and 105 g crude protein (CP) per kg DM; 47 and 57 g crude fibre per kg DM; the wheat contained 845 and 800 g DM per kg; 112 and 116 g CP per kg DM; 23 and 25 g crude fibre per kg DM; and the silages contained 190 and 177 g DM per kg; 153 and 176 g CP per kg DM; 80 and 104 g ammonia-nitrogen per kg total nitrogen. On average over the two experiments, for treatments LB, HB and W respectively, silage DM intakes were 5·4, 4·7 (s.e. 0·14) and 4·9 (s.e. 0·11) kg/day; total DM intakes 7·9, 8·3 (s.e. 0·14) and 8·1 (s.e. 0·11) kg/day; metabolizable energy intakes 91·4, 97·8 and 94·2 MJ/day; live-weight gains 1·04,1·19 (s.e. 0·029) and 1·10 (s.e. 0·023) kg/day and carcass gams 0·65, 0·77 (s.e. 0·017) and 0·70 (s.e. 0·013) kg/day. It is concluded that the feeding value of wheat was proportionately 0·98 of that of barley for finishing beef cattle when given as a supplement to grass silage, and that the type of cereal offered did not affect silage intake or carcass composition.

The aim of this study was to provide information on the fatty acid profile of different adipose depots - subcutaneous (upper and inner backfat layers) and intramuscular (m. Longissimus dorsi) in East Balkan pigs. The animals were reared in free-range conditions and slaughtered at an average live weight of 107?1.65kg. The results of the study showed that the various adipose tissues in pigs have different lipid metabolism and hence differ in their fatty acid composition. Intramuscular fat had significantly higher content of the saturated C16:0 and C18:0 (P<0.001), as well as the C16:1 (P<0.001) than the subcutaneous fat. In regards to the content of the polyunsaturated fatty acids, the latter displayed considerably higher content of both C18:2 and C18:3 (P<0.001) in comparison to the intramuscular fat in m. Longissimus dorsi. The differences between the subcutaneous and intramuscular adipose tissue in the individual fatty acids determined the similar trend of change in the total content of saturated and polyunsaturated fatty acids. Significant differences between the backfat layers were detected for C16:1, C18:0 and C18:3 (P<0.001). Stearic acid (C18:0) displayed higher content of the inner, while both C16:1 and C18:3 had higher proportion in the outer backfat layer in the East Balkan pigs. Except for C20:2, the long chain polyunsaturated n-6 and n-3 fatty acids had significantly higher proportions in the intramuscular fat, however no differences were determined between the two backfat layers.

AbstractThe aim of this work was to determine whether developmental changes in growth hormone (GH) secretory patterns and carcass composition were influenced by nutrition and genotype in sheep. Four-month-old wether lambs from lean (low backfat), fat (high backfat) and control selection lines were nutritionally restricted to maintain a 28 kg live weight or given food ad libitum for 24 weeks. Plasma concentrations of GH and insulin-like growth factor 1 (IGF-1) were measured at predetermined times and carcass composition of the animals determined at the end of the trial.From week 3 on, restrictions in dry matter (DM) intake were observed as the ad libitum treatment group had a significantly greater intake than the restricted treatment group (7·70 v. 5·80 kg DM per week, s.e.d. = 0·81). Differences in live weight between the feeding treatments were significant (P < 0·05) at week 9. The restricted feeding regime was associated with significant reductions in plasma levels of IGF-1 but had no effect (P > 0·05) on carcass weight-adjusted carcass fat proportion at the close of the trial. The effect of food restriction on GH secretory patterns was variable. Although there was initially a suppression in mean plasma GH, there was subsequently significantly higher mean plasma GH in the restricted feeding treatment. Periodogram analysis indicated that both the absolute levels of GH and the GH secretory pattern were altered by restricted feeding. In all animals, mean and basal GH concentrations, as well as the frequency and amplitude of pulses, declined from February to March and then increased from May to July (P < 0·001).DM intake and live weight did not differ (P > 0·05) between genotypes, however the fat genotype had greater carcass fatness than lean or control genotypes (P < 0·01). There were no consistent differences between genotypes in plasma IGF-1 concentrations. In the ad libitum treatment, the lean and control genotypes had higher plasma GH levels than the f at genotype but the pattern of GH release did not vary. Under restricted feeding, both the pattern and the level of plasma GH varied between genotypes.It is concluded that the developmental change in GH secretory patterns is affected by nutrition but not in a consistent manner. Although restricted feeding resulted in higher mean plasma GH concentrations later in the trial, this did not result in a change in carcass composition. The biological cues which lead to increased fat deposition in older lambs need further study but plasma GH levels may not he an important mechanism in this process.

SUMMARY1. Three groups, each of eight steers, were fed on pelleted diets containing 30, 50 or 70% ground barley straw, maize and soya bean meal. On an air-dry basis the diets contained 12% crude protein.2. Daily live-weight gain was 1·29, 1·19 and 1·02 kg/day for the 30, 50 and 70% straw diets respectively, and was negatively related to the percentage of crude fibre in the dry matter (r = −0·61, P < 0·05).3. The apparent digestibility of dry matter, determined in sheep at the maintenance level of feeding was negatively related to percentage crude fibre in the dry matter (r = −0·91, P < 0·001).4. All animals were killed at approximately the same live weight, which was reached on average in 140,153 and 163 days by the 30, 50 and 70% groups, respectively.5. The differences in mean carcass weight between treatments were significant (P < 0·05). Killing-out percentage was significantly reduced (P < 0·05) as the proportion of ground barley straw in the diet was increased from 30 to 70%.6. The proportion of straw in the diet had no direct effect on the composition of carcass gain.7. The results are discussed in relation to the intake of digestible energy.

Levels of n-6 and n-3 PUFAs, including those with 20 and 22 carbon-chains, in concentrate-fed Asturiana de los Valles (AV) yearling bulls with and without the double muscling gene <I>(mh/mh</I> = 24, <I>mh</I>/+ = 26, +/+ = 25) were measured to examine if this gene influences the pattern of PUFA deposition in different adipose tissues. Fatty acid compositions of muscle tissue (<I>longissimus thoracis</I>) and intermuscular and subcutaneous adipose tissues were determined by gas chromatography. The composition of intramuscular fat was unique compared to the other two adipose tissues which were similar in composition. In general, n-6 and n-3 fatty acid elongation and desaturation products were affected by AV genotype and this effect was most evident in n-3 PUFAs of the intramuscular fat of <I>mh/mh</I> (n-6/n-3 = 11.8 and 18:2n-6/18:3n-3 = 25.3) compared to <I>mh</I>/+ and +/+ animals (mean values of n-6/n-3 = 9.86 and 18:2n-6/18:3n-3 = 15.5). PUFA elongation and desaturation end products did not accumulate to any great extent in intermuscular and subcutaneous adipose tissues. Beef from <I>mh/mh</I> cattle showed greater deposition rates of n-3 elongation and desaturation products but their absolute content of total n-3 fatty acids was lower (21 mg/100 g meat) in comparison with <I>mh</I>/+ and +/+ cattle (mean value of 25 mg/100 g meat).

1. Samples of subcutaneous (inguinal) and perinephric adipose tissue were obtained, at slaughter, from each of twenty male calves. Three were neonatal animals, three were 3 days old and two were fed on reconstituted milk to appetite until they weighed 100 kg. The other twelve calves were given milk until they reached 50 kg live weight; concentrates were then included in the diet until, at 60 kg live weight, six calves were slaughtered. The remaining six calves were raised to 100 kg on concentrates alone. The weight of the empty reticulo-rumen of each slaughtered calf was recorded.2. The component fatty acids of the adipose tissue triglycerides of the neonatal and 3-day-old calves were very similar; about 80% consisted of oleic acid (18:1) and palmitic acid (16:0) and the remainder comprised stearic acid (18:0), palmitoleic acid (16:1) and myristic acid (14:0), together with very small amounts of other acids which, in the glycerides of the 3-day-old calves, included some evidently of colostral origin. The perinephric glycerides of both these groups of calves were somewhat more unsaturated than were those of subcutaneous adipose tissue.3. The continued consumption of milk by the calves slaughtered at 60 kg live weight was reflected in the presence of enhanced proportions of 14:0, 18:2, 17:0 and 17:1 in the depot triglycerides and, in addition, very small amounts of branched-chain acids and trans 18:1 were detected. A similar fatty acid pattern was observed in the triglycerides of the calves which were given milk only until they were 100 kg live weight. In all these calves only limited growth of the rumen took place.4. By contrast, the calves which were raised on solid feed from 60 kg to 100 kg and in which rumen development had taken place had depot triglycerides whose fatty acid composition resembled that found in adult animals. Increased proportions of stearic acid accompanied by relatively large amounts of trans 18:1 were present, evidently as a result of the assimilation of the products of bacterial modification of dietary fatty acids in the rumen.5. Regardless of the age of the calves and the over-all fatty acid composition of their tissue triglycerides, the intramolecular disposition of the fatty acids was similar in that saturated components were present esterified mainly in positions 1 and 3, and unsaturated acids for the most part in position 2; the only major exception to this distribution pattern was in respect of trans 18:1 which, when present, was preferentially esterified to the primary alcoholic groups of the glycerol moiety as if it were a saturated acid.

Chemical parameters involved in technological meat quality for dry cured processing of Gascon pigs were studied in longissimus dorsi (LD) and biceps femoris (BF) muscles. Muscles from Gascon pigs showed 2.60 and 2.84% of intramuscular fat content, 23.64 and 22.14% protein content and 1.34 and 4.63mg of myoglobin per gram of muscle (respectively LD and BF). Intramuscular fat (IMF) and myoglobin levels were higher than those reported for commercial pigs, but lower than those previously found in Iberian pigs. A similar situation was detected in the fatty acid composition of neutral and polar lipids of both muscles. Thus, monounsaturated fatty acids (MUFA) in neutral lipids of Gascon pig muscles (LD and BF respectively) were 58.27 and 51.98%, while polyunsaturated fatty acids (PUFA) levels were 5.61 and 14.13% respectively; values similar to those found in Iberian pigs and quite different to usual values in commercial pig breeds. The same trend was found in polar lipids. Both muscles showed a low susceptibility to induced lipid oxidation, in agreement with their fatty acid composition. These results pointed out that meat from pigs of the Gascon breed showed optimal characteristics for dry cured processing.
