Technological advances and changes in consumer preferences for safer food with better shelf life have led to packaging innovations like smart packaging. Smart packaging systems involve the blend of active and intelligent packaging properties. Most of the smart packaging systems in food sector are mainly focused on fish, sea, food, meat, poultry, fruits and vegetables. With cheese being the major dairy product and its market expanding exponentially, smart packaging systems for cheese are exhaustively addressed in this book chapter. Some of the smart packaging systems pertaining to cheese like antioxidant releasers, antimicrobial packaging, ripening indicator and self-cleaning rinds can hasten commercial acceptance and reliability of cheese products. This book chapter also tabulates the recent data related to production, and consumption of cheese, permitted additives, types of active and intelligent packaging systems explored for cheese and commercial suppliers of smart packaging systems. Along with, future research directions for smart packaging of cheese are also presented.

Smart packaging, also known as intelligent packaging, is responsive to external stimuli, moisture, light, oxygen, heat, pH, and bacterial growth. It has evolved from extensive applications in food safety, bacterial response, and medical packaging. Interactive packaging has a scientific basis for additional information about food products because these codes give all required data. This work deals with a combination of frontline food sciences, smart and interactive packaging that are applicable for future production of nutrition packages through smart detection of food spooling. Additionally, it verifies the best degree of food safety and population demands as the third generation of packaging technology. High qualified duplex laminated package with a nano-encapsulated pH monitoring label for fresh fish was printed. The interactive Quick Response code icon was combined in a designed package with important information about cooking, smart packaging, and fish quality. Therefore, particle size, zeta potential, and surface area are measured for a nanoencapsulated indicator which exhibits 74.4 nm, 23.6 mV, and 88.9 m2/g, respectively: overall migration, water vapor, and oxygen permeability. The properties of printing for 11 color spots are evaluated by x-rite before and after the cold storage period without any detectable changes in the rate of color change (ΔE). The bacterial count of the tested sample is examined by counting the microbial colonies in the agar plate media. There is good agreement between microbial count and smart indicator color change as an effective direct detection tool for sustainable food quality and safety.

ABSTRACT For climacteric fruits, such as mango, losses have been reported from harvest to fruit consumption. Thus, controlled refrigeration and passive modified atmosphere have been used in combination with edible and biodegradable coatings or plastic packaging to minimise these losses. The present study aimed to evaluate the influence of carnauba wax and Xtend plastic packaging film, with and without refrigerated storage, on the post-harvest preservation of 'Tommy Atkins' mangoes. The fruits were coated with carnauba wax and/or wrapped in Xtend bags and then stored at 12 ± 1 and 25 ± 3 °C for 21 days. The weight loss, fruit firmness, total soluble solids, titratable acidity, vitamin C content, and the CO2 concentration inside the package were determined at 7-day intervals. Cold storage was observed to slow down the rate of degradation and to reduce adverse degradation reactions. By coating the fruits with carnauba wax, packaging them with Xtend plastic and keeping them under refrigeration, it was possible to store the mangoes at 12 ± 1 °C for 21 days. In this way, the CO2 concentration was reduced, mass loss and acidity were decreased, and the fruit firmness was preserved.

Most fresh horticultural commodities are highly perishable and thus require proper care and handling during and after harvesting. Hence, packaging (pre-packaging, primary, secondary and tertiary) becomes an essential operation in prolonging the shelf life of the processed or fresh horticultural produce. Packaging provides containment and protection to the product and convenience and communication about the inside product to the end consumer. Consumer requirements and demands and world wide shifting patterns such as expectation of life and companies putting money into the production and delivery of food are driving innovation in food and packaging. Smart packaging is a novel and fascinating technological area with a lot of positive feedback from today’s consumers. The two primary forms of smart packaging are active and intelligent packaging. Active packaging systems include active compounds put into sachets or pads and then placed in the package, as well as placed directly in the package or on the packaging material. Intelligent packaging comprises signs that describe the product’s safety and quality, history, and the environment surrounding the container. Packaging in the traditional sense functions as a passive barrier, delaying the detrimental impact of environmental factors on the food product. These new innovative packaging systems, on the other hand, allow the package to interact with the environment and food, as well as play a vital part in the preservation of horticultural commodities. Despite substantial study into the innovative packaging technologies, several of these innovations have yet to be successfully deployed in commercial horticultural produce packaging systems. Comprehensive awareness of their potential in horticulture product packaging applications will help with effective development and broad commercial introduction.
