Edible jellyfish have been consumed as food for more than a century with offering high protein and crunchy texture. The pepsin hydrolysis of jellyfish protein yields jellyfish protein hydrolysate (ep-JPH), reported for potential bioactivities such as antioxidant activity or antihypertensive activities. Due to the substantial number of by-products generated from jellyfish processing, the by-products were then selected as a raw material of JPH production. This research aimed to evaluate the effect of the hydrolysis time of pepsin on the antioxidant activity of ep-JPH. The dried desalted jellyfish by-products powder was enzymatically hydrolysed by 5% (w/w) pepsin, and the hydrolysis time was varied from 6, 12, 18, and 24 h at 37oC. Results showed that increased hydrolysis time increased the degree of hydrolysis (DH) and inhibition of DPPH radical. The 24 h ep-JPH possessed the highest DH and the highest inhibitory effect of DPPH radical. The results demonstrated that, in this experiment, all ep-JPHs were DPPH radical scavengers, exhibiting different inhibition activities depending on DH values.

Background: The cucurbit fruits are usually used around the world and are seasonal products traditionally used in human food. They are considered as a source of antioxidants which protect human body from several diseases. Objective: The aim of this study is to evaluate the antioxidant contents (total phenolics, flavanoids, flavanols, condensed tannins, carotenoids, and vitamin C) and the antioxidant activity of the fruits of Cucurbita pepo and Cucurbita moschata harvested in Bejaia from Algeria. Methods: The quantification of the antioxidants was performed using spectrophotometric methods. The antioxidant activity of the extracts was determined using the DPPH• and the ABTS•+ radical scavengers effect. Beforehand, the optimization of the solvent extraction of total phenolics was investigated using 7 different solvents: water, acetone and ethanol at 90, 60 and 30% (v/v). Results: The results showed that the acetone 90% (v/v) was the solvent which gave the extract with the better content of total phenolics (42.44 ± 0.41 mg Gallic Acid Equivalent/100 g FW). The concentrations of total phenolics, flavonoids, flavonols, carotenoids and vitamin C were higher in C. pepo than C. moschata. The higher antioxidant activity of the acetone extract was showed by C. moschata fruit (38.66 ± 1.39%) for DPPH• radical, while C. pepo fruit developed the higher antioxidant activity for ABTS•+ radical (46.89±1.05%). Conclusion: The richness of Cucurbita species in antioxidants allows them to be used in different industries including agri-food to protect from oxidation.

CycloDOPA (leukodopachrome), a well known metabolite of tyrosine, is a precursor of melanine in mammalian organisms and of the pigment betalain in plants. However, the isolation of cycloDOPA from natural sources has not been widely reported. In the present work, the stabilities of cycloDOPA and cycloDOPA methyl ester at various pH levels were studied. Both compounds were stable under acidic conditions. By contrast, both compounds were unstable when the pH was shifted from neutral to basic to form indole derivatives as major products. Based on the pH stability, cycloDOPA and its derivatives were subjected to the DPPH radical scavenging assay for the first time.
