The study of the effect of the modified atmosphere packaging on quality of the bread was done after replacing wheat flour with amaranth flour in replacement of wheat flour for 0, 5, 10 and 15% by weight. The bread was stored for one, three and seven days in the ATM, 100% N2 and 30% CO2. The study proved the 30% CO2 modified atmosphere to be the optimal storage condition. It allowed to preserve volume, water content and contributed at least to increase in hardness of bread, which with the addition of amaranth flour decreased. The colour of bread during storage was characterised by the increase in L* parameter and decrease in a* and b*. For the decreased storage time, the effect was opposite. The replacement by 5% of amaranth flour increased the polyphenol content and did not affect bread quality.

Aimed of this study was to determine the effect of the concentration of liquid smoke powder of coconut (Cocos nucifera Linn) and storage time and their interaction in maintaining the quality of smoked milkfish presto. The chemical qualities were based on water content and crude protein content, and the organoleptic qualities were based on colour, odour, texture and flavour. The research was conducted in Randomized Complete Block with two factorial design. The first factor was the concentration of liquid smoke powder 0%, 5% and 10%; whereas the second factor was storage time 0, 2 and 4th days at room temperature; using 3 replications. The results showed that smoking process with different concentration of liquid smoke powder and different storage time affect the chemical and organoleptic qualities of milkfish presto smoke, between 2 treatments their interaction gave significant effect (p <0.05) on milkfish presto smoke chemical quality and shows the linear pattern of trends (55.03% – 62.91% water content and 28.66% – 34.00% crude protein content). Based on organoleptic tests, the concentrations of 5% liquid smoke powder and 2 days storage time gave the best combination that can maintain the quality of milkfish presto smoke.Keywords: milkfish presto smoke, liquid smoke powder, storage time   ABSTRAKTujuan penelitian ini adalah untuk mengetahui pengaruh konsentrasi bubuk asap cair tempurung kelapa (Cocos nucifera linn) dan lama penyimpanan beserta interaksinya dalam mempertahankan kualitas bandeng presto asap. Kualitas kimia berdasarkan pada kadar air dan kadar protein kasar, sedangkan kualitas organoleptik berdasarkan pada warna, aroma, tekstur dan rasa. Rancangan percobaan menggunakan Rancangan Acak Kelompok dengan percobaan faktorial terdiri atas dua faktor. Faktor pertama adalah konsentrasi bubuk asap cair 0%, 5% dan 10%, sedangkan faktor kedua adalah lama penyimpanan hari ke-0, ke-2 dan ke-4 pada suhu ruang. Masing-masing perlakuan diulang sebanyak tiga kali. Hasil penelitian menunjukkan bahwa proses pengasapan dengan konsentrasi bubuk asap cair yang berbeda dan lama penyimpanan yang berbeda dapat mempengaruhi kualitas kimia dan organoleptik bandeng presto asap. Ditunjukkan juga bahwa hasil interaksi keduanya memiliki pengaruh  nyata (p<0,05) terhadap kualitas kimia bandeng presto asap dan menunjukkan pola kecendrungan dengan pola linier (kadar air 55,03% – 62,91% dan kadar protein kasar 28,66% – 34,00%). Berdasarkan uji organoleptik, konsentrasi bubuk asap cair 5% dan lama penyimpanan 2 hari adalah kombinasi terbaik yang dapat mempertahankan kualitas bandeng presto asap. Kata kunci: bandeng presto asap, bubuk asap cair, lama penyimpanan

Tobacco is an important commodity in the economy in Indonesia. Tobacco stems are worthless waste. Tobacco stems contain 56.10% cellulose, making it high potential as a particle board raw material. The process of making particleboard that affects quality is the pressing process during printing. Greater pressure printing presses make bonds between particles stronger. Strong bonding between particles is intended so that the board does not change during storage. The purpose of this study is to determine the characteristics of particleboard in various variations of printing pressure load and storage time and to find out the best treatment as a recommendation in the manufacture of tobacco stem particleboard. The research method was factorial CRD with a combination of treatments between 2 factors namely printing load (4 kg and 8 kg) and storage time (0, 12, and 24 days). The results showed 1.13 - 1.25 g.cm-3 for the density value, water content 4.97 - 12.57%, and water absorption 240.03 - 208.00%. MOE and MOR values ​​were 16000.13 - 36222.77 kgf. cm-2 and 824.47 - 1697.83 kgf.cm-2. The recommended treatment load is 8 kg printing pressure with 12 days of storage time.

ABSTRACT          The aims of this study was to determine the effect of salt concentration on the organoleptic test of the chemical snail kowoe (pila ampullacea) pindang during storage. This research was conducted at the Laboratory of Fisheries Technology Department of the Faculty of Fisheries and Marine Sciences, University of  Halu Oleo (UHO). This study used a completely randomized design (CRD) consisting of salting with a concentration of 8%, salting with a concentration of 19%, and salting with a concentration of 27% with three replications. Based on the results of the study on the effect of salt concentration showed that the highest taste value at treatment N1 was 6 (quite like), the highest water content in treatment N3 was 82.60%, ash content at N3 treatment was 7.19%, protein content in treatment N1 was 14.30%, fat content at N1 treatment was 1.18% and carbohydrate content in N3 treatment was 6.53%, the effect of storage time showed that the highest water content in treatment T1 was 79.03%, ash content in T3 treatment was 6.39%, protein content in treatment T1 was 12.35% , fat content in treatment T1 was 0.93% and carbohydrate content in treatment T1 was 5.79% and the interaction of salt concentration and storage time showed that the mean value of appearance, smell, taste and texture was obtained the highest value in a row ie at N1T1 treatment of 5 (enough likes), N1T1 treatment is 5 (quite like), N1T2 treatment is 7 (likes), N1T1 treatment is 5 (likes), as long as n the water content, ash, protein, fat and carbohydrate obtained the highest levels in a row namely at N3T1 treatment of 83.34%, N3T3 treatment at 7.23%, N1T1 treatment at 14.44%, at N1T1 treatment at 1.18% and N3T1 treatment at 6.87%. Keywords: Kowoe Snail, Salting, Proximate, Organoleptic ABSTRAKTujuan penelitian ini adalah untuk mengetahui pengaruh konsentrasi garam terhadap uji organoleptik kimia keong kowoe (Pila ampullacea) pindang selama penyimpanan. Penelitian ini dilaksanakan di Laboratorium Jurusan Teknologi Hasil Perikanan Fakultas Perikanan dan Ilmu Kelautan UniversitasHalu Oleo (UHO).Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) yang terdiri penggaraman dengan konsentrasi 8%, penggaraman dengan konsentrasi 19%, dan penggaraman dengan konsentrasi 27% dengan tiga kali ulangan. Berdasarkan hasil penelitian terhadap pengaruh konsentrasi garam menunjukkan bahwa nilai rasa tertinggi pada perlakuan N1 sebesar 6 (cukup suka), kadar air tertinggi pada perlakuan N3 sebesar 82.60%, kadar abu pada perlakuan N3 sebesar 7.19%, kadar protein pada perlakuan N1 sebesar 14.30%, kadar lemak pada perlakuan N1 sebesar 1.18% dan kadar karbohidrat pada perlakuan N3 sebesar 6.53%, pengaruh lama penyimpanan menunjukkan bahwa kadar air tertinggi pada perlakuan T1 sebesar 79.03%, kadar abu pada perlakuan T3 sebesar 6.39%, kadar protein pada perlakuan T1 sebesar 12.35%, kadar lemak pada perlakuan T1 sebesar 0.93% dan  kadar karbohidrat  pada perlakuan T1 sebesar 5.79% dan interaksi konsentrasi garam dan lama penyimpanan menunjukkan bahwa rerata nilai rupa, bau, rasa dan tekstur diperoleh nilai tertinggi berturut-turut yakni pada perlakuan N1T1 sebesar 5 (cukup suka), perlakuan N1T1 sebesar 5 (cukup suka), perlakuan N1T2 sebesar 7(suka), perlakuan N1T1 sebesar 5 (cukup suka), sedangkan kadar air, abu, protein, lemak dan karbohidrat diperoleh kadar tertinggi berturut-turut yakni  pada perlakuan N3T1 sebesar 83.34%, perlakuan N3T3 sebesar 7.23%, perlakuan N1T1 sebesar 14.44%, pada perlakuan N1T1 sebesar 1.18% dan perlakuan N3T1 sebesar 6.87%.Kata kunci: Keong Kowoe, Penggaraman, Proksimat, Organoleptik

Masalah yang sering muncul  pada buah-buahan adalah adalah cepatnya mengalami kerusakan karena proses respirasi dan transpirasi sehingga akan memperpendek umur simpan. Salah satu upaya memperpanjang kesegaran buah Kelengkeng dengan pemakaian Edible Coating.  Penelitian ini bertujuan untuk mengetahui kemampuan Edible Coating sebagai pengemas buah Kelengkeng selama penyimpanan. Perlakuan penelitian terdiri atas aplikasi Edible Coating (Kontrol) dan lama penyimpanan (1 hari, 2 hari, 3 hari, 4 hari, 5 hari dan 6 hari). Parameter yang diamati adalah susut berat, kadar air dan warna. Rancangan percobaan yang digunakan adalah rancangan acak lengkap pola faktorial dengan dua kali ulangan. Pengaruh perlakuan aplikasi Edible Coating dan lama penyimpanan berpengaruh sangat nyata terhadap susut berat, kadar air dan warna buah Kelengkeng. Penggunaan Edible Coating sebagai pelapis mampu mengurangi susut berat buah Kelengkeng, mempertahankan kadar air dan warna buah Kelengkeng selama penyimpanan. The problem that often arises in fruits is that they are quickly damaged due to the respiration and transpiration processes so that they will shorten their shelf life. One of the efforts to extend the freshness of Longan fruit is by using Edible Coating. This study aims to determine the ability of Edible Coating as a packaging for longan fruit during storage. The research treatment consisted of Edible Coating application (Control) and storage time (1 day, 2 days, 3 days, 4 days, 5 days and 6 days). Parameters observed were weight loss, moisture content and color. The experimental design used was a completely randomized design with a factorial pattern with two replications. The effect of Edible Coating application treatment and storage time had a very significant effect on weight loss, moisture content and color of Longan fruit. The use of Edible Coating as a coating is able to reduce the weight loss of longan fruit, maintain water content and color of longan fruit during storage

This study aims to determine the effect of giving levels of turmeric flour and storage time on microbiological quality, sensory quality and chemical quality of mackerel fish sausages. The method used in this research is descriptive research used to observe the total number of bacterial colonies and molds, while experimental research using Factorial randomized block design (RBD) for analyzing sensory tests. Completely Randomized Design (CRD) factorial pattern for analyzing water content and pH tests. The results showed the administration of turmeric flour can inhibit bacteria and mold for 12 hours. Sensory testing showed an interaction between the level of turmeric flour treatment and storage time. Chemical testing shows the storage time can cause fluctuations in water content. The pH test shows the level of turmeric flour can increase the pH value, and the pH value will decrease during storage. The conclusion of the study is that the level of turmeric flour and storage time affect the quality of sausage microbes. The interaction between the level of turmeric flour and the length of storage has an influence on the taste and texture of fish sausages during storage by inhibiting the growth of microbes so as to maintain quality degradation. levels of turmeric flour and storage duration affect the chemical quality of sausages

Ready-mixed concrete has been used as a support in mine roadways, where the impact load of blasting excavation can cause damage to the concrete support of the roadway. However, limited studies are available on the effect of water content, storage period, and impact pressure on dynamic mechanical properties of ready-mixed concrete in uniaxial load and passive confining pressure states. To investigate the effect of water contents (0%, 1.0%, 1.5%, and 2.0% by mass of dry sand), storage periods (0 d, 3 d, 7 d, 15 d, 20 d, and 30 d), and impact pressures (0.6 MPa and 0.9 MPa) on dynamic mechanical properties of ready-mixed concrete in uniaxial load and passive confining pressure states, the dynamic compression test using split Hopkinson pressure bar (SHPB) has been carried out. In addition, the microscopic test based on the scanning electron microscope (SEM) is conducted to analyze the effect of water content and storage period on the microstructure of ready-mixed concrete. The experimental results show that under the conditions of uniaxial load and passive confining pressure, the dynamic compressive strength of ready-mixed concrete decreases with the increase of water content and storage period but increases with the increase of impact pressure. At the same impact pressure, the dynamic compressive strength in passive confining pressure state is larger than that in uniaxial load state. The dynamic stress-strain curves of ready-mixed concrete in uniaxial load and passive confining pressure states can be divided into three stages: elastic stage, plastic stage, and failure stage. The peak strain increases with increasing impact pressure, and the peak strain in passive confining pressure state is more than that in uniaxial load state. The degree of damage for ready-mixed concrete specimens increases with the increase of the storage period and water content; however, the damage of specimens in passive confining pressure state is less than that of specimens in uniaxial load state. Meanwhile, an analysis to the microstructural mechanism of water content and storage period inside of ready-mixed concrete has been performed.
