AbstractMulberry leaves are used in traditional Chinese medicine and contain numerous active substances that are known to be beneficial for human health. The aim of this study was to investigate the phenolic compositions and antioxidant activities of the leaves from 23 mulberry cultivars. Qualitative LC-ESI-QTOF analysis revealed the presence of 11 phenolic compounds in the free phenolic extracts and 10 phenolic compounds in the bound fractions. Chlorogenic acid and caffeic acid were the major components in the free and bound fractions, respectively. The results revealed that the changguosang cultivar from Taiwan contained the greatest content of phenolic compounds as well as the highest antioxidant activity among the 23 cultivars examined, as determined using three separate antioxidant assays. The isoquercitrin, chlorogenic acid, and rutin contents of the free phenolic extracts displayed significant correlations with the antioxidant activities, while syringic acid and rutin were the main contributors to the antioxidant activities of the bound phenolic fractions. The obtained results demonstrate that mulberry leaves contain a variety of beneficial phenolic substances and may be suitable for further development as a herbal medicine.

The impacts of the urbanized environment of Donetsk region on the contents of biologically active substances and heavy metals in black elderberry (Sambucus nigra L.) flowers and on the total antioxidant activity of their preparations were evaluated. The contents of lead, cadmium and mercury in all samples studied were within the tolerable limits specified for herbal medicinal raw products. The accumulation coefficients of lead and cadmium were found to decrease with increasing soil levels of these toxicants, whereas the level of mercury did not depend on the degree of soil pollution. The contents of active substances in all samples collected in Donbas conform to the requirements of the State Pharmacopoeia of the Russian Federation. In fact, the contents of carotenoids, flavonoids and hydroxycinnamic acids are increased in S. nigra flowers collected in urbanized areas; however, the contents of other phenolic substances (anthocyanins and tannins) are decreased. The contents of ascorbic and free organic acids are highest under moderately urbanized conditions, so as the antioxidant activity of S. nigra flower preparations is. The results suggest that prospects for the pharmaceutical use of S. nigra flowers collected in urbanized areas of Donbas are promising.

Confectionery - food products, usually with a high sugar content, characterized by high calorie content and digestibility. They are divided into groups: sugar, flour confectionery, chocolate, cocoa. The following types of products are used as the main raw materials for the preparation of confectionery products: flour (wheat, rye, corn, rice, oatmeal, etc.), sugar, honey, fruits and berries, milk and cream, fats, eggs, yeast, starch, cocoa, nuts, food acids, gelling agents, flavoring and aromatic additives, food dyes and baking powder. The high content of carbohydrates, proteins and fats, as well as polyunsaturatedfatty acids and some vitamins determines the significant value of confectionery products. The influence of shelf life on biscuit semi-finished products prepared according to the classical recipe using pomace powder and concentrated juice of black currant and blueberry berries is shown. Methods used in the experimental part: measurement of the total phenolic content using the Folin-Chekelau reagent, the total content of flavonoids and anthocyanins, the level of free radical capture DPPH (2,2-diphenyl-1-picrilhydrazyl), the total antioxidant activity by the FRAP method and the antioxidant activity in the linoleic acid system. It was found that the content of phenolic substances, flavonoids, anthocyanins and antioxidant activity is greatly influenced by high humidity and a constant light source. These indicators are significantly reduced, but when stored in a vacuum, this decrease in indicators can be slowed down.

Fucoxanthin has great potential to be developed as an antioxidant. The purposes of this study were to determine the effect of acetone solvent concentration and maceration temperature on the fucoxanthin content and antioxidant activity of brown algae extract (Sargassum polycystum) and determine the best acetone solvent concentration and maceration temperature on the fucoxanthin content and antioxidant activity of brown algae extract (Sargassum polycystum) . The study was the experimental research which designed by using randomized block desin (RBD) with two factors. The first factor was solvent concentration that consists of 70, 80 and 90 percent. The second factor was maceration temperature that consists of 30±2?, 40±2? and 50±2?. The data were analyzed by analysis of varian (ANOVA) and continued with the Tukey test. The results showed that the concentration of acetone solvent was influential on the content of fucoxanthin and antioxidant activity but did not affect the yield. Maceration temperature is influential on yield, fucoxanthin content and antioxidant activity. Interactions between treatments of acetone solvent concentration and maceration temperature greatly affect the content of fucoxanthin and antioxidant activity but do not affect the yield. The treatment of acetone 80 percent solvent concentration and maceration temperature 30±2? is the best treatment to produce brown algae extract (Sargassum polycystum) with a yield of 3.24 ± 0.45 percent, fucoxanthin content 1.03 ± 0.01 g fukosantin/g and antioxidant activity 99 ± 8.49 ppm and show activity powerful antioxidant. <p class="Default">Antioxidants play a central role in the prevention of carcinogenesis. The most natural compounds exhibit their protective effects by eliciting antioxidant potential. Sulfated polysaccharide was isolated from the brown algae <em>Padina tetrastromatica</em>, then purified and evaluated for its composition and <em>in vitro </em>antioxidant and antimitotic activities. Both ethanolic sulfated polysaccharide (ESPS) and ethanolic sulfated polysaccharide-column purified (ESPS-CP) exhibited considerable amount of carbohydrates (11.2% and 17.6%), sulfate (11.4% and 7.4%), fucose (5.5% and 15.7%), uronic acid (4.7% and 11.8%), xylose (0.5% and 0.03%) and sulfated polysaccharide (2.4% and 12.7%) content. The FTIR analysis and phytochemical screening also confirmed the presence of sulfated polysaccharides. In the <em>in vitro</em> antioxidant activity determination using DPPH (1-1-diphenyl 2-picryl hydrazyl) radical scavenging activity, hydroxyl radical scavenging activity, superoxide anion scavenging activity, hydrogen peroxide scavenging activity, total antioxidant activity and reducing power, ESPS showed more activity than ESPS-CP. In the case of nitric oxide radical scavenging, ESPS-CP was found to be more effective. At a concentration of 2mg/ml, both samples were potent antioxidants with significant IC<sub>50</sub> values. The antimitotic studies such as mitotic index in onion root tips and sprouting assay in green gram seeds also proved that both the extracts are able to prevent mitosis. The extrapolation of these results can find opportunities in therapeutic regiments of cancer.<strong></strong></p>

Couroupita guianensis Aubl is also called as “Cannon ball tree”. The tree has enormous medicinal values since most of the parts like leaves; flower, fruits and stem are used as medicine to cure various diseases. During the last few decades it has been observed that there are numerous reports on anti-inflammatory activity, antiulcer activity, anticancer activity, antioxidant activity, anthelminthic activity of this plant. It is enriched with a number of compounds such as oils, ketosteroids, glycosides, courouptine, indirubin, isatin and phenolic substances. Phytochemical analysis of the extract showed the presence of major classes of phytochemicals alkaloids, phenolic compounds such as flavonoids, tannins and saponins. Studies reveal that C. guianensis. Aubl. Is a source of medicinally active compounds and have various pharmacological effects.
