The environmental consequences of technogenic pressure pose a real threat to the health of the population and animals. The main danger to humans is the presence of pollutants of radiation and chemical nature in food. The production of animal products that meet the regulatory requirements, and the ensure of veterinary and sanitary welfare in regions with increased anthropogenic load is impossible without the use of effective methods of reduce the intake and accumulation of pollutants in the organism of animals. Therefore, in areas with a difficult environmental situation, when performing general detoxification, it is necessary to use a wider range of pharmacological agents, including antioxidants, immunomodulators, vitamin and mineral supplements and other biologically active substances that compensate for the negative effects that develop in the body as a result of exposure to harmful ecological factors, contribute to the restoration of health, increase the productivity of farm animals and product quality. In this regard, the combined use of anti-toxic and biologically active substances in the composition of sorption-detoxifying complexes is rational. As a result of testing the effectiveness of seven samples of sorption-detoxifying complex compositions in terms of their effect on the accumulation of Cd and Pb in the body of white rats, it was found that studied formulations reduce their intake to organs and tissues by 1.2-2.9 times, depending on the composition of the detoxifier, both separately and with the presence of heavy metals when combined with radioactive substances in the feed.

Preserving health, as well as increasing country population life expectancy, are priority directions of Russian Federation state policy. Human health mainly depends on the usefulness and balance of the nutrition. Ecological factors are the same important, which necessitates increase in the volume and assortment of food products with bifidogenic properties, introduced by phytocomponents of functional purpose systems. The use of natural origin biologically active substances, the source of which are plants, is a promising direction for expanding the range of functional fermented milk products. The research objective is a development of technology for herodietic food product with the addition of a symbiotic microorganism consortium, as well as the introduction of phytocomponent modules Amelanchier rotundifolia. The work was performed at the Department of Engineering and Technology of Food Production FGBOUVPO «Don State Technical University», Rostov-onDon. The objects of research were irgi phyto-extract (Amelanchier), cheese whey, raw cow’s milk, developed product. The functional significance of the irgi phyto-extract, as one of the necessary and significant components in the production of specialized products for herodietetic nutrition, is technically justified and experimentally proved.

SummaryPlatelets were found to aggregate spontaneously when exposed to ultrasound generated by a commercial therapeutic device. At a given frequency, aggregation was found to be a dose-related phenomenon, increasing intensities of ultrasound inducing more extensive and more rapid aggregation. At any single intensity, the extent aggregation was increased as the frequency of the applied ultrasound was decreased (from 3.0 to 0.75 MHz).Ultrasound-induced platelet aggregation was found to be related to overall platelet sensitivity to adenosine diphosphate. More sensitive platelets were found to aggregate spontaneously at lower intensities of sound, and also the maximum extent of aggregation was found to be greater. Examination of ultrasound-induced platelet aggregates by electron microscopy demonstrated that the platelets had undergone the release reaction.The observation that haemoglobin was released from erythrocytes in whole blood irradiated under identical physical conditions suggests that the platelets are being distrupted by ultrasonic cavitation (violent gas/bubble oscillation).It is postulated that overall platelet aggregation is the result of two distinct effects. Firstly, the direct action of ultrasonic cavitation disrupts a small proportion of the platelet population, resulting in the liberation of active substances. These substances produce aggregation, both directly and indirectly by inducing the physiological release reaction in adjacent undamaged platelets.

Introduction. Lipids are a widespread group of biologically active substances in nature, making up the bulk of the organic substances of all living organisms. They accumulate in plants in seeds, as well as in fruits and perform a number of vital functions: they are the main components of cell membranes and the energy reserve for the body.Aim. Study of neutral lipids of sown oats (Avena sativa L.).Materials and methods. The objects of the study were fruits (grains) of oats of the sown variety "Tashkent 1," harvested in the Republic of Uzbekistan. Results and discussions. Neutral lipids of oat grains have been found to contain 13 fatty acids with a predominance of the sum of oleic, linolenic and linoleic acids. The total degree of unsaturation was almost 78%. Absorption bands characteristic of these substances were observed in the IR spectrum of MEGC.Conclusion. According to the results of the NL analysis, oat grains consisted of triacylglycerides and free LCDs, which were accompanied by hydrocarbons, phytosterols, triterpenoids and tocopherols.
