Several samples of cheese obtained from regular retailers in Campinas, Brazil, were examined for molds and mycotoxins. Strains of Aspergillus and Penicillium were isolated and evaluated for their potential for producing toxins. Two of the isolated Penicillium species produced citrinin, while another produced patulin. However, no mycotoxins were detected in any of the cheese samples tested. Experiments with different types of cheese and a semisynthetic cheese were carried out in order to verify production of citrinin and patulin. It was observed that citrinin may be produced in cheese with high water activity and in semisynthetic cheese. However, patulin does not appear to be stable in cheese, even in semisynthetic cheese with high water activity and high carbohydrate contents.

Anorexia nervosa is a disorder characterized by loss of appetite, amenorrhoea, and weight loss in the absence of any primary psychiatric or physical illness (Dally and Sargant, 1966). Features which have recently been stated to be of value in distinguishing it from anorexia due to other causes are: denial of illness, bradycardia and lanugo hair (Wright et al., 1969). The weight losses in this condition are usually at least 20 per cent of ideal body weight, depending on the quality and promptness of treatment.

In agreement with what is known of pancreatic adaptation to dietary composition, a progressive lowering of amylase-to-chymotrypsinogen ratio was observed in the pancreases of rats fed mixed diets of increasing casein and decreasing carbohydrate contents. The same changes in ratio were found when casein alone was increased in otherwise isonitrogenous meals fed to rats provided ad libitum with a protein-free diet. Pancreatic accumulation of chymotrypsinogen was increased while that of amylase was decreased in spite of low-protein and high-carbohydrate intakes. Lowering the lipid content of the protein-free diet reduced the effectiveness of casein meals in lowering the amylase-to-chymotrypsinogen ratio. It is concluded that 1) the capacity of protein-rich diets to induce adaptative changes in pancreatic secretion does not depend on the absolute amount of proteins passing through the duodenum but rather on the increased protein concentration in the alimentary bolus, 2) protein concentration affects both amylase and chymotrypsinogen, and 3) lipids have a cooperative effect.

In a retrospective study of case notes a number of experiential and psychological factors were discerned of possible importance to the psychogenesis of anorexia nervosa. These factors included issues of dependence and independence, sexual challenge, concern about obesity, and a variety of other, less specific stresses. Attempts to confirm the findings by means of a prospective study were impeded by difficulties in defining the onset of the illness. While in some patients the occurrence of anorexic type behaviour led immediately to weight loss, in others there was a significant delay between the onset of behavioural change and consequent emaciation.
