The aim of this study was to compare the effect of two different types of oils in diet on the fatty acid profile in the eggs of layers and to include a particular type of oil as a supplement of feeding mixtures for layers in order to support the development of functional foodstuffs. Thirty layers fed a diet containing soybean oil constituted the control group (soybean oil is the most frequently used oil added to feeding mixtures). In the experimental group (thirty layers), soybean oil was replaced with linseed oil at the same amount (3 kg of oil per 100 kg of feeding mixture). Feeding was provided ad libitum for all days of the month. After one month, egg yolks were analysed and the fatty acid profile was compared. Significant differences (P ≤ 0.05) were found in the concentration of myristic acid that belongs to the group of saturated fatty acids. Eggs in the experimental group showed higher concentrations of myristic acid compared to the control group (0.20 g/100 g of fat and 0.18 g/100 g of fat, respectively). Highly significant differences (P ≤ 0.01) were found for heptadecanoic acid but the trend was opposite to that of myristic acid; concentrations of heptadecanoic acid in the experimental group were lower than those in the control group. Highly significant differences (P ≤ 0.01) were found for n-9 monounsaturated fatty acids where egg yolks in eggs from layers fed linseed oil contained higher concentrations of oleic acid, myristoleic acid, and palmitoleic acid. Lower concentrations of n-6 fatty acids (P ≤ 0.01) were found after the addition of linseed oil in eggs. Linseed oil showed a positive effect on n-3 fatty acids (α-linolenic acid), its concentration in the control and experimental group was 0.82 g/100 g of fat and 5.63 g/100 g of fat, respectively. The possibility of influencing the fatty acid profile in eggs is very important for the development of functional foods.

Linseed oil that has been hydrogenated to a plastic consistency is subject to a type of deterioration termed "flavour reversion" when heated to temperatures used in baking or frying. Investigation of the course of hydrogenation of linseed oil by the spectral method of Mitchell, Kraybill, and Zscheile (11) has indicated that linolenic acid is converted to an isomeric linoleic acid; this acid differs from naturally occurring linoleic acid in that the double bonds are in such positions that diene conjugation is not produced by high-temperature saponification. In a typical hydrogenation, the concentration of the isomeric acid increased to a maximum, at about iodine number 120, of 18% of the total fatty acids, and at iodine number 80, at which point the plasticity was similar to that of a commercial shortening, the concentration of the isomer was 13%. Evidence is presented that the isomeric linoleic acid in partially hydrogenated linseed oil is responsible for the unpleasant flavour that develops when the oil is heated.

SummaryTwo experiments were carried out to test the effects of ryegrass maturity on rumen lipid metabolism. In the first experiment the effect of stage of maturity of perennial ryegrass on lipid metabolism in the rumen was studied with grazing sheep fitted with rumen cannulae. The pasture was either immature (13·8% crude protein), mature (8·1% crude protein) or senescent (5·5% crude protein).The ratesin vitroof triacyl glycerol lipolysis and linoleic acid (18: 2w6) hydrogenation were found to decrease with increasing age of the ryegrass.In the second experiment the sheep were dosed with emulsified linseed oil (30 g) via rumen cannulae while grazing immature or senescent ryegrass and the rumen digesta and blood plasma sampled at 0, 4 and 8 h after dosing.The proportions of linseed oil retained in the rumen were greater and blood plasma linoleic (18:2w6) and linolenic (18:3w3) acid concentrations higher when senescent ryegrass was fed.It was concluded that the rates of rumen lipolysis and hydrogenation decreased with the age of pasture and that after dosing with linseed oil the polyunsaturated fatty acid concentrations in blood plasma increased.

A method for the iodine-catalyzed conjugation of soybean oil was developed, and the conjugated product was analyzed by UV, IR, and 1H NMR. The results indicated that the optimal conditions for conjugation included a temperature of 180?C, a catalyst loading of 0.5 wt.% and a reaction time of 3 h, at which the concentration of conjugated linoleic acid was 1.51 mol L-1, with 92 % conversion, the CLNA reached 0.225 mol L-1 when the temperature was 130?C, a catalyst loading of 0.5 wt.%, and a reaction time of 3 h with a conversion rate of 99.9 %. The reaction predominantly produced trans-trans, trans-cis and cis-trans isomers. It was also revealed that the conjugation of linolenic acid was much faster than that of linoleic acid. The method possessed the advantages of a short procedure, a high conversion rate, and no methyl esterification of the raw material, and it was an environmentally friendly technology that does not use solvents.

To evaluate phenolic compounds and whether the combination of a tanniferous fruit and soybean oil could improve the performance, meat characteristics, and fatty acid (FA) profile in lambs, an experiment was conducted over 40 days with twenty creole male lambs (23.71±3.46 kg). The lambs were allotted in a completely randomised design, with factorial arrangement 2 × 2, with the following dietary treatments: (1) control diet, (2) 2%Caesalpinia coriariaground fruit dry matter (DM), (3) 2% soybean oil DM, and (4) 2%Caesalpinia coriariafruit plus 2% soybean oil. The concentration of condensed tannins (CT) inCaesalpinia coriaceawas 21.71 g/kg DM. No interactions were detected (P>0.05) among soybean oil andCaesalpinia coriaria, and there were no differences in daily gain, intake, and feed conversion. Soybean oil reduced (P<0.05) DM digestibility (68.05 versus 59.56%). In fat from thelongissimus thoracis et lumborum(LTL) muscle, only linoleic acid presented differences (P<0.05) between treatments. The combination ofCaesalpinia coriaceafruit and soybean oil did not improve lamb performance at the included levels.
